It's a great example of a regenerative farm that maintains a variety of eco-systems on the land. The Self's philosophy underlying their farming methods is deep uncompromising commitment to the principles of animal welfare.
At Butchers of Distinction we are supplied with whole animal pork and lamb from Tamarack Farms and this month we are extremely excited to feature Mangalitsa Pork. This heritage Hungarian breed is known for its extremely high fat ratio. The meat has a deep red colour with substantial marbling and the taste sets itself apart from other pork breeds, so much so, that it is sometimes referred to as "the Kobe Beef of pork".
